ELEANOR'S SPECIAL PEACH PIE 
1 pie shell, cooked
3/4 c. sugar
2 tbsp. flour
3 tbsp. cornstarch
1/4 tsp. salt
Cool Whip or whipped cream
4 to 6 peaches
2 egg yolks
2 tbsp. butter
1 tbsp. lemon juice
2 c. milk

Bake pie shell. Set aside. Peel and slice peaches while pudding is cooking and line bottom of pie shell with raw peach slices. Layer peaches 2 to 3 high. To make pudding, mix flour, sugar, cornstarch and salt. Add milk slowly. Cook until it begins to thicken. Add well beaten egg yolks and butter. Cook until thick, then add juice. Cool. Pour over sliced peaches. Top with Cool Whip or whipped cream. May also substitute fresh bananas.
