LOW-CAL VEGGIE DIP 
2 c. low fat cottage cheese
2 cloves garlic, crushed
2 tbsp. minced scallions
1 tbsp. minced fresh chives
1/2 tsp. minced fresh thyme (or 1/4 tsp. dried thyme)
2 tbsp. minced parsley
1 tbsp. minced oregano (or 1 tsp. dried oregano)
2 tbsp. lemon juice

Finely sieve cottage cheese until smooth and creamy. Fold in garlic, scallion, herbs and lemon juice. Cover and refrigerate several hours to allow flavors to blend. Serve well chilled surrounded with assorted fresh vegetables. Cut into strips or slices.
