SMOKY BARBECUED CHICKEN 
5 lbs. chicken

SAUCE:

1 (8 oz.) can tomato sauce
1/3 c. flat beer
2 tbsp. soy sauce
2 tbsp. distilled white vinegar
1 1/2 tsp. minced fresh garlic
3/4 tsp. each salt, black pepper & ground red pepper

Bake chicken in a foil-lined pan 45 minutes at 450 degrees. Simmer sauce ingredients 20 minutes over moderate heat, stirring several times. Pour sauce over baked chicken. Let marinate 1 hour at room temperature, basting often with sauce.

Prepare coals and cover barbecue rack with heavy-duty aluminum foil; puncture foil in several places. Adjust rack so that it's 5 inches above heat source. Arrange chicken on foil-covered grill. Cover with lid or a foil tent. Grill chicken about 1 hour, until very tender and smoky, basting often with remaining sauce. Makes 8 servings. 354 calories per serving.
