DIVINE DATE - NUT LOAF
4 eggs
1 c. sugar
1/2 c. oil
1 c. sifted flour
1 lb. chopped pitted dates, about 3 c.
4 c. pecan halves

Beat together the eggs, sugar and oil. Add the dry ingredients and mix together well.

Pour into a greased and floured loaf pan (9x5x3-inches) and place in a cold oven. Turn on the oven to 300 degrees and bake for 1 1/2 to 2 hours, or until cake is firm in the middle.

Let cool completely. Remove from pan and slice with a very sharp knife. Or, wrap and freeze for slicing and serving later. You will enjoy this chewy date-nut loaf as a snack, at parties, for dessert or any time you want to serve something delicious. Makes a 3-pound loaf.
