DATE NUT LOAF 
2 1/2 c. all purpose flour
1 c. U & I sugar
1 c. raisins
1 c. chopped walnuts
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 (8 oz.) pkgs. pitted chopped dates
2 c. hot water
1/4 c. butter
1 tsp. vanilla
2 eggs, beaten

In bowl, stir together flour, sugar, raisins, nuts, baking powder, soda, cinnamon, salt, dates. In a separate bowl, stir together water, butter, vanilla and eggs until butter melts. Add to first mixture. Pour into two greased 4 1/2 x 8 1/2 loaf pans. Bake at 325 degrees for 1 hour and 25 minutes. Let cool in pan for 10 minutes, then turn out on a rack and chill thoroughly. Yield 2 loaves.
