BANANA FRITTERS 
4 bananas, very ripe
1 tbsp. sugar
1 c. milk
1 tbsp. lemon juice
1 tsp. baking powder
3 eggs
1 tbsp. melted butter
1 1/2 c. flour
Grated nutmeg

Peel bananas and cut into small pieces. Beat egg yolks until light; add to bananas and beat until thoroughly mashed. Beat egg whites until stiff and set aside. Blend flour, sugar, baking powder and flavorings into banana mixture. Fold egg whites into batter. Drop by tablespoonsful into hot fat; fry until golden. Serve with fruit sauce.
