LEMON OAT BARS 
14 oz. can sweetened condensed milk
1/2 c. lemon juice
1 tsp. grated lemon rind
2/3 c. butter, softened
1 c. firmly packed dark brown sugar
1 1/2 c. well-stirred all-purpose flour
1 tsp. baking powder
1 c. quick cooking oats

Grease a 13x9x2 inch baking pan. In a small bowl whisk together condensed milk and lemon juice until blended; stir in lemon rind; reserve.

In a medium bowl with a wooden spoon beat together butter and brown sugar; sprinkle with flour and baking powder and stir until blended; stir in oats. Mixture will be crumbly. Spread half the flour-oat mixture in the prepared pan, patting it down; spread lemon mixture over top; sprinkle with remaining flour-oat mixture.

Bake in a preheated 350 degree oven until brown around edges (about 25 minutes). Place on a wire rack to cool for 15 minutes. Chill before cutting into bars. Cover and store in refrigerator. Before serving, let stand briefly at room temperature.
