OLD-FASHIONED FILLED COOKIES | |
2 c. sugar 2 eggs 1 c. plus 2 tsp. shortening 1 tsp. vanilla 6 c. sifted flour 4 tsp. cream of tartar 2 tsp. baking soda 1 tsp. salt 1 c. milk Cream together sugar, eggs, shortening, and vanilla. Sift together 5 cups flour, salt, cream of tartar, and soda. Add alternately with milk. Add last cup flour gradually. Dough should be soft. Chill thoroughly. FILLING: 3 c. raisins 2 tsp. flour 1 c. sugar 1 c. water 1/4 c. finely chopped nuts (optional) Combine ingredients for filling. Cool until stiff. After dough is chilled, roll 1/8 inch thick on floured board, use a 2-inch cookie cutter dipped in flour. Shape cookies and place on lightly greased cookie sheet 2 inches apart. Place 1 heaping teaspoon of filling on cookie circle, then top with another cookie circle. Press edges together with fingers and prick top with fork. Bake at 350 degrees for 10 to 12 minutes. |
