HOT PEPPER JELLY 
3/4 c. chopped hot peppers, seeded
3/4 c. chopped bell peppers, seeded
6 1/2 c. sugar
1 1/2 c. vinegar
1 (6 oz.) bottle Certo
3 to 4 drops red or green food coloring

Combine peppers and vinegar in blender or food processor and pulverize. Pour into large saucepan and bring to boil over medium high heat. Stir in sugar and boil for 1 minute. Remove from heat. Add Certo and food coloring. Pour into jars and seal with paraffin wax.

To be used with poultry, beef, or pork as you would use mint jelly with lamb. Makes great inexpensive Christmas gifts for co-workers.
