WINTERY DAY BEAN SOUP 
2 c. mixed dried beans (use at least seven varieties of beans)
2 tbsp. salt
2 qts. water
2 c. diced ham or sliced smoked sausage
1 lg. onion, chopped
1 clove garlic, minced
1 tsp. chili powder
1 (28 oz.) can tomatoes, chopped
1-2 tbsp. lemon juice

Rinse beans; place in large kettle. Cover with water, add salt and soak overnight. Drain. Add 2 quarts water and ham or sausage. Simmer for 2 1/2 to 3 hours. Add onion, garlic, chili powder, tomatoes and lemon juice. Simmer 45 minutes. Add salt and pepper, if desired.

Fixed this in the crockpot yesterday and we really liked it. I brought the beans and water to a boil the night before and then let them soak overnight. After draining the rinsing in the morning I started the beans on high for an hour, then added the rest. By accident I used 1 TABLESPOON of chili powder, but it wasn't too hot for me with 2 tbsp. lemon juice. Keeping it on high all day it was done when we needed to eat. This was all done with NO SALT or pepper.
