RICE PUDDING 
1 c. rice (not instant)
10 c. whole milk
1 c. sugar
1 tsp. salt
2 tsp. vanilla

Put 6 cups milk and rice in heavy kettle. Cook slowly with temperature just below boiling. Stir constantly as it thickens, adding more milk, 2 cups at a time until all milk is used up. When mixture is thick, add sugar, salt and vanilla; stir well. Pour pudding in bowl. Sprinkle cinnamon on top. Takes about 1 hour to make.
