SALMON LOAF | |
1 (16 oz.) can salmon 1 tbsp. vinegar or lemon juice Cold water 2 med. eggs, beaten 1/2 tsp. salt 1/2 tsp. black pepper 1/4 c. finely chopped celery 1 slice fresh bread, finely crumbled or 7 saltine crackers, finely crumbled 2 tbsp. cut green onions 1 tbsp. green pepper Preheat oven to 325 degrees. Prepare a loaf pan with vegetable shortening. Drain salmon. Add vinegar or lemon juice to salmon juice and add enough cold water to make 1/2 cup of liquid. Add to salmon. Add all remaining ingredients and mix thoroughly. Pack into prepared loaf pan and bake for 1 hour. Leave loaf in pan 5 minutes before unmolding, onto a serving platter and slice. Serves 4. |
