PEANUT BRITTLE 
1 1/2 c. sugar
1/2 c. water
1/4 c. butter
1 tbsp. vanilla
1/2 c. light corn syrup
1/2 lb. raw peanuts with skin
1 tbsp. baking soda

Grease an oblong, shallow pan and keep warm. Mix vanilla and soda and set aside. Combine sugar, corn syrup and water in saucepan. Cook to soft ball on candy thermometer. Add peanuts and butter and cook to hard crack stage. Once candy thermometer reaches a hard crack, stir in vanilla and soda as quickly as possible (do not over stir). Pour immediately into warm pan as you want mixture to be bubbly when poured in the pan.
