BROCCOLI, CHEESE & RICE
CASSEROLE
 
1 stick butter
1/2 c. chopped onions
4 boxes chopped broccoli, thawed
2 cans cream of mushroom soup
2 cans milk (measured in soup cans)
7 oz. box Minute Rice, uncooked
16 oz. Velveeta cheese, cut into cubes

In large pot, melt butter. Saute onions in butter. Add broccoli and saute until mixture is hot. Add soup, milk, rice and cheese. Stir until cheese is melted into mixture. Bake in 13 x 9 inch pan at 350 degrees for 1 hour or until lightly brown on top.
