CHEDDAR CHEESE SAUCE 
3 tbsp. melted butter
3 tbsp. all-purpose flour
1-1/2 c. milk
1/2 tsp. salt
1/4 tsp. dry mustard
1 c. (4 oz. not packed down) shredded cheddar cheese

Melt butter in heavy sauce pan over low heat; add flour stirring until smooth. Cook one minute, stirring constantly. Add milk, cook over medium heat, stirring until mixture is thickened and bubbly. Add cheese.

Yield: 2 cups.
