SCOTCH EGGS 
4 hard-boiled eggs
1 egg, beaten
1 lg. sausage (bulk)
Bread crumbs or cracker meal

Peel eggs. Dip in beaten egg, then cover with thick layer of sausage meat. Dip again in egg, then in bread crumbs or cracker meal. Fry in deep fat for about 10 minutes. Drain well on paper toweling. Serve hot or cold. Slice eggs. Serve with hot mustard.
