My father served this to the Royal Families of Italy. 5 eggs 2 tsp. baking powder 1/4 lb. chopped salami 2 tbsp. fresh parsley 1/4 c. grated cheese 5 tbsp. flour Salt and pepper to taste Beat egg yolks separate, add baking powder, fold in beaten egg whites, add salami (chopped), parsley, salt, pepper, grated cheese and last add flour. Mix well. Pour into flat buttered cookie sheet, 1/4 inch thick. Bake 15 to 20 minutes in 275 degree oven, cool and cut into small 1/2 inch cubes. Serve approximately 2 tablespoons to pour in hot beef stock broth per person. |
