FRENCH FRIED MUSHROOMS 
1/2 lb. sm. fresh mushrooms
1 egg
1 tbsp. water
1/2 c. fine dry bread crumbs
1/2 tsp. salt

Cut stems off mushrooms. Rinse caps quickly in cold water and dry thoroughly between paper towels. In small bowl, beat egg and water together.

In another bowl, mix the crumbs and salt. Dip each mushroom into the egg batter and then the crumbs. Place on wax paper and let stand about 1 hour. Deep fry at 400 degrees until golden brown, about 5 minutes. Drain on paper towels. Sprinkle lightly with additional salt, if wished. 3 to 4 servings.
