STIR FRY BROCCOLI WITH MUSHROOMS AND CASHEWS | |
2 tbsp. salt oil 1 lb. fresh broccoli, cut in flowerets 1 tsp. sugar 1/2 tsp. salt 8 oz. fresh mushrooms, cut in 1/4 inch slices 2 green onions, finely chopped 1/4 tsp. ground nutmeg Dry roasted cashews Heat 1 tablespoon oil in wok. Add broccoli, sugar and salt. Stir fry 3 minutes or until broccoli is tender-crisp. Add remaining oil, mushrooms, onions and nutmeg. Stir fry until all vegetables are tender-crisp, about 1 to 2 minutes. Sprinkle on cashews and serve hot with rice. Makes 6 servings. |
