STIR FRY BROCCOLI WITH MUSHROOMS
AND CASHEWS
 
2 tbsp. salt oil
1 lb. fresh broccoli, cut in flowerets
1 tsp. sugar
1/2 tsp. salt
8 oz. fresh mushrooms, cut in 1/4 inch slices
2 green onions, finely chopped
1/4 tsp. ground nutmeg
Dry roasted cashews

Heat 1 tablespoon oil in wok. Add broccoli, sugar and salt. Stir fry 3 minutes or until broccoli is tender-crisp. Add remaining oil, mushrooms, onions and nutmeg. Stir fry until all vegetables are tender-crisp, about 1 to 2 minutes. Sprinkle on cashews and serve hot with rice. Makes 6 servings.

I searched re broccoli and mushrooms and found this. I also had some cashews and am slow cooking chicken soup ~ planned cooking up quinoa (instead of noodles), and had cashews on hand ~ which altogether sealed the deal while cooking my soup. I don't have a wok but used a large sautepan. I did add few oz chicken broth during saute process and added 1 oz or so of tamari sauce. Then served over the quinoa. Delish!!
