JIFFY PEACH COBBLER | |
3 to 3 1/2 c. canned, sliced peaches, drained 1/2 c. peach juice 1/4 lb. butter 1 c. sugar 1 c. flour 1 tsp. baking powder 1/4 tsp. salt 1 c. milk Heat fruit and juice to boiling. Melt butter in 2 quart casserole. Mix flour, sugar, baking powder and salt and stir in milk. Beat until smooth. Pour this cake-like mixture into hot butter in casserole. do not stir; pour hot fruit in middle and do not stir. Bake in 350 degree oven for 1 hour. The buttery cake rises around the edge of the fruit. Serves 6 to 8. |
