GREAT - GRANDMA'S GNOCCHI 
2 c. flour
1 lb. ricotta cheese
1 egg

Mix ingredients together until smooth. Roll dough into 1/2 inch thick rope shapes. Cut 1/2 inch pieces. Pinch in the middle of each piece. Air dry or freeze shapes on cookie sheet and later package for freezing.

To Prepare: Boil salted water. Add the gnocchi and boil for 10 to 12 minutes, drain. Serve with your favorite spaghetti sauce.
