COATING:

1 recipe chocolate cupcakes - 1 1/2 to 2 doz.
1 env. unflavored gelatin
1/3 c. cold water
1/2 c. sugar
2/3 c. white corn syrup
1 tsp. vanilla
2 c. coconut

Soften gelatin in cold water - place over boiling water until dissolved. Add sugar; put syrup and vanilla in small mixer bowl, add gelatin and sugar mixture, and beat until thick. Spread coconut on a sheet of waxed paper. Drop a teaspoon of marshmallow mixture on coconut. Press cupcake in marshmallow, and continue until the cupcake is covered.
