EASY CHICKEN CACCIATORE 
2 1/2 - 3 lb. broiler - fryer chicken, cut up
3 tbsp. olive oil
2 cans (14 1/2 oz. each) Italian style stewed tomatoes
6 oz. can tomato paste
2 c. sliced mushrooms
1 tsp. crushed basil
Salt and pepper
Hot cooked pasta

Fry chicken in oil until browned on all sides, about 15 minutes. Drain. Add stewed tomatoes, tomato paste, mushrooms, basil, and salt and pepper to taste. Cover and simmer 30 minutes. Serve over hot cooked pasta. 4 to 6 servings.
