SOFT LEMON COOKIES 
1 1/4 c. sugar
1 c. shortening
1/2 tsp. salt
Yellow food coloring
1 egg
1 c. sour milk or buttermilk
1 tsp. baking soda
2 tsp. lemon extract
3-4 c. flour

Combine sugar, shortening, salt and food coloring; blend thoroughly. Add remaining ingredients; mix well. Roll out small portion of dough at a time; cut with a biscuit cutter. Place on cookie sheet. If desired sprinkle sugar over top of cookies. Bake at 375 degrees for 10 minutes. 2 dozen cookies.
