APPLE CAKE 
1 lg. banana (replaces 1 c. sugar)
2 c. finely chopped apples
1 c. flour (rye, wheat, millet, oat, rice)
1 tsp. baking soda
1 tsp. sea salt
1 c. chopped nuts
1 egg
1/4 c. oil
1 tsp. vanilla

Combine ingredients. Pour in 8 inch loaf pan, buttered. Bake at 350 degrees for 40 minutes. Can freeze whole or in pieces. Good warm, with butter or room temperature.
