APPLE BARS 
2 1/2 c. flour
1 tsp. salt
1 egg yolk
1 c. shortening
2/3 c. milk

FILLING:

1 c. cereal (Rice Krispies or Cheerios) rolled fine or crushed
10 to 12 med. apples; peeled, cored & cut into even chunks (like for a pie)
1 c. sugar & 1 tsp. cinnamon (mixed together)
2 to 4 tbsp. raisins (opt.)

ON TOP:

1 egg white, slightly beaten
1 c. powdered sugar
2 tbsp. milk
1/2 tsp. vanilla extract

CRUST: Mix together and divide in half. Wrap each piece in plastic wrap and chill in the refrigerator for at least 15 minutes. Then roll out one half on a floured pastry sheet so it will form a bottom crust in an 11 x 15 inch pan.

FILLING: Spread 1 cup of crushed cereal over the crust. Place the apple chunks evenly over the cereal. Pour the sugar and cinnamon mixture over the apples. Then sprinkle the raisins on top, if desired.

TOP CRUST: Roll out the other half of the crust and place on top. Crimp the two crusts together all around the edges to seal in juices. Using a sharp knife, cut several slits in top crust. Brush with beaten egg white.

Bake at 350 degrees for about 40 to 45 minutes until lightly browned.

FROST: Mix the powdered sugar, vanilla and milk. When cool, drizzle the icing over the top of the apple bars. Cut into serving size pieces and enjoy!
