OATMEAL & APPLE BUTTER BARS 
1 1/2 c. flour
1 c. packed dark brown sugar
3/4 c. butter, cut into pieces
1 1/4 c. old fashioned oats
3/4 c. apple butter

In a large bowl mix the flour and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in oats until well blended. Press half the mixture (about 2 1/4 cups) firmly into a greased 8 inch square pan to form a compact layer. Spread the apple butter to within 1/2 inch of the edges. Sprinkle the remaining oats mixture over the apple butter and press down carefully but firmly. Bake at 350 degrees for about 40 minutes or until lightly brown. Cool in the pan on rack. Cut into 1 x 4 inch bars or 2 inch squares. Yields 16 bars.
