TABBOULEH (CRACKED WHEAT SALAD) 
1 1/2 c. cracked wheat
3 c. water

Prepare cracked wheat. Boil water, add wheat, reduce heat to simmer until water is absorbed, the same as rice. Rinse in cold water, drain and squeeze out water. 1 cucumber, pared, seeded and chopped 3/4 c. snipped parsley 12 green onions, sliced 1/2 c. olive or salad oil 1/2 c. lemon juice 2 tsp. dried mint, crushed 1/2 tsp. garlic salt 1/4 to 1/2 tsp. pepper 4 med. tomatoes, seeded and chopped

Combine bulgar, cucumber, parsley and onion. In a screw top jar, combine dressing ingredients and shake well. Pour over mixture and refrigerate 4 to 24 hours. Before serving, stir in tomatoes.
