CURRY POWDER 
1/4 c. turmeric
1/4 c. cumin seeds
3 tbsp. coriander seeds
1 tbsp. ginger powder
1 tbsp. black pepper corn
1 tbsp. cardamom
2 tsp. whole cloves
1 tsp. fennel pepper
1 tsp. black mustard seeds
1 tsp. fenugreek seeds
1 tsp. nutmeg
1 tsp. garlic powder
1 cinnamon stick
1 tsp. onion powder
1 med. dried chile (optional)

Spread all whole spices on a baking sheet and bake at 200 degrees for 30 minutes. This softens them. Then either grind all spices together with a mortar and pestle or in a blender.

Note: Purchase a spare blender cup from a thrift shop as turmeric will stain plastic, but does not affect other items put in blender. Makes about 3/4 cup.
