BAKED EGGPLANT 
1 med. eggplant
2 tbsp. butter
Pinch salt - pepper
Dash Tabasco sauce
Sm. onion (grated)
2 eggs
1/2 c. milk
1/2 c. grated American cheese
6 soda crackers

Peel and cut in cubes and soak in salt water 1 hour. Drain, put in fresh water and cook until soft, about 15 minutes. Pour off water and mash.

Add 2 tablespoons butter, pepper, salt, dash Tabasco sauce, onion.

Beat 2 eggs. Add 1/2 cup milk, 6 soda crackers (crumbled), cheese. Combine with eggplant mixture. Pour into buttered casserole. Cover with buttered bread crumbs or grated cheese. Bake 45 minutes at 350 degrees.
