OATMEAL MUFFINS 
1 1/2 c. flour
1 c. oatmeal, quick variety
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon
1 egg, slightly beaten
3/4 c. milk
1/3 c. vegetable oil
1/2 c. mashed bananas, or diced apples, raisins or dates.

Stir together dry ingredients mix egg, milk, oil and fruit. Add liquid ingredients to dry stir until moistened. Spoon into paper lined muffin cups. Bake 15 to 18 minutes at 375 degrees.
