CREAMY CHICKEN AND VEGETABLE
CASSEROLE
 
1/4 c. butter
1 red & green pepper (cut in strips)
1 c. sour cream
3 whole chicken breasts, boned, skinned & cut in pieces
1/2 lb. mushrooms, sliced
1 pkg. frozen spinach (thawed & squeezed dry) do not cook
1 tsp. paprika
1 onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup

Heat butter in large skillet, saute mushrooms, peppers and onions 3 minutes, stir in spinach. Cook 2 minutes more. Remove from heat and add soup, sour cream, paprika and 1/4 pepper; mix well. Spoon into bottom of 2 quart casserole, arrange chicken on top of vegetables and bake 35 minutes at 350 degrees or until chicken is tender.
