SHANE'S HOMEBREW BBQ SAUCE
2 cups ketchup (Hunts)
1 (8 oz.) can tomato paste
1/4 cup apple cider vinegar
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1 cup brown sugar
1/2 cup molasses (maple syrup could be substituted for a different taste)
1 tsp. salt
1 tsp. pepper
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. paprika of your choice (sweet, hot or smoked)
1 tsp. ground ginger

OPTIONAL:

1/3 cup water
4 tsp. cornstarch

In a 2-quart saucepan add ketchup, tomato paste, vinegar, Worcestershire sauce, soy sauce, sugar and molasses. Stir well and simmer over medium-low heat for about 10 minutes the add spices, stir well and cook for another 5 to 10 minutes.

The mixture will start thicken, however it will not be as thick as most commercial barbecue sauce. If you wish to thicken the sauce further simply mix the 1/3 cup water and 4 teaspoons of cornstarch together in a small bowl and add during the last five minutes of simmering. This will thicken the sauce quiet well.

Add to jars or bowl with lid and keep refrigerated.

HOMEBREW SPICY SAUCE:

2 tbsp. Hot pepper sauce
2 tsp. cayenne pepper
2 tsp. hot pepper flakes

For a spicy sauce, stir in the above ingredients into the base sauce.

If you would like to take it even further...

HOMEBREW PSYCHO EXTREME SAUCE:

1 Serrano chili, seeded and finely chopped
1 1/2 tsp. Habanero powder

Stir in the above ingredients into the spicy sauce. Enjoy!
