CHEESE CAKE 
CRUST:

1 c. graham crackers (smash about 7 whole crackers)
1/4 c. butter, melted

Press into Springform pan.

FILLING:

4 egg whites, stiffly beaten
1 c. sugar
1 tsp. vanilla
1/4 tsp. almond extract
1/4 tsp. lemon extract

Beat eggs until stiff; then add sugar, vanilla, almond extract and lemon extract. Beat 3 (8 ounce) packages of cream cheese and add to above. Pour over crust in pan. Bake 30 minutes at 350 degrees. Remove from oven. Turn oven temperature up to 475 degrees. Let stand 10 minutes, no longer.

TOPPING:

1 pt. (2 c.) sour cream
3 tbsp. sugar
1/2 tsp. vanilla
1/2 tsp. cinnamon

Pour over baked mixture, put back in oven at 475 degrees for 7 minutes.
