COUNTRY CASSEROLE 
1 lb. lean ground round
Salt & pepper
1/2 c. chopped celery
1/2 c. chopped onion
1/2 c. chopped green pepper
1 (8 oz.) can tomato sauce
8 slices American cheese
2 c. instant potatoes
Paprika

In a heavy skillet brown meat well, salt and pepper to taste. Add celery, onion and green pepper. Cook until vegetables tender. Blend in tomato sauce. Simmer until most of the liquid is absorbed. In a buttered 1 1/2 quart baking dish layer half of the meat mixture, 4 cheese slices, remaining meat mixture. Cut 4 cheese slices diagonally in half. Place in overlapping fashion over meat mixture. Put mashed potatoes around sides of casserole, sprinkle with paprika. Bake in 350 degree oven for about 15 minutes to melt cheese.
