LIME CHEESECAKE BARS 
4 tbsp. unsalted butter
2 lg. limes
1 c. graham cracker crumbs
1 tbsp. + 2/3 c. sugar
1 lb. cream cheese, room temperature
2 eggs
1 tbsp. cornstarch
1/4 c. sour cream
Pinch of salt

Heat the oven to 325 degrees. Line a 9" baking pan with a sheet of foil extending 2" beyond 2 sides of the pan. Melt the butter. Grate 1 tablespoon zest from the limes and squeeze 2 tablespoons juice. Combine the melted butter, graham cracker crumbs and 1 tablespoon sugar. Press evenly into the bottom of the prepared pan. With an electric mixer set at medium-low speed, beat the cream cheese and the remaining 2/3 cup sugar until smooth. Beat in the lime zest and juice, eggs, cornstarch, sour cream and salt. Pour into the pan. Bake until firm, 45 to 50 minutes. Cool completely before cutting.
