GINGERBREAD CAKE 
Lighter and not as spicy as regular gingerbread.

Cream: 1/2 c. sugar

Add: 2 eggs

Dissolve 1/2 tsp. baking soda in 1/2 cup water and add to above mixture.

Sift together and add: 1 tsp. baking powder 1 tsp. ginger 1 tsp. cinnamon 1/4 tsp. salt

Mix thoroughly and pour into 8x8 greased pan. Bake at 350 degrees 25 to 30 minutes.

This is a good breakfast treat warmed and buttered.
