BAKED PORK TENDERLOIN WITH GRAVY 
1 whole pork tenderloin, about 1 lb.
1 tsp. salt
1/4 tsp. pepper
1/4 c. butter
1 sm. onion, finely chopped
1 c. finely chopped celery (I use more)
2 tbsp. parsley
1 c. chicken broth

Brown pork in butter (2 tablespoons). Saute vegetables in remaining butter. Add chicken broth, cover and bake at 325 degrees for 1 hour. Serves 4.
