CRISP CUCUMBER SOUP 
2 med. cucumbers
1 tbsp. green onion, chopped
1/4 c. parsley, chopped
1 qt. buttermilk
1 tsp. salt

Peel cucumbers, remove seeds and grate to make 1 to 1 1/2 cups. Combine with other ingredients, cover and chill about 4 hours. Mix again just before serving. Trim with parsley sprigs. Serves 8 to 10.
