CRISP CUCUMBER SALAD 
2 med. cucumbers (about 1 lb.), peeled and sliced thin
1 sm. onion, sliced thin
1/2 c. sour cream
2 tbsp. sugar
3 tbsp. cider vinegar
3/4 tsp. salt
1/4 tsp. dry mustard and pepper
1 tbsp. parsley, minced

In serving dish, gently toss cucumbers and onion to mix; chill until serving time. Beat sour cream, sugar, vinegar, salt, mustard and pepper until well blended. Pour over cucumbers onion mixture. Sprinkle with parsley. Serve at once. Serves 4 to 5.
