BAKED SAUSAGE WITH PEPPERS 
For 4 servings you will need:

1 to 1 1/4 lb. hot or sweet Italian sausage
4 potatoes, peeled
2 red peppers
2 green peppers
2 med. onions
1 tsp. dried oregano leaves
Dash freshly ground pepper
2 green onions, sliced

Slice potatoes and onions. Place in a microsafe dish. Cover.

Microwave at HIGH power for about 4 minutes, stirring once.

Add sliced peppers. Sprinkle with oregano leaves. Cover.

Microwave at MEDIUM HIGH power for another minute. Let stand for 3 to 4 minutes.

Poke sausages with a fork in several places. Place in dish with potatoes and peppers.

Microwave at HIGH power for 7 minutes, uncovered.

Turn vegetables and sausages over.

Microwave for another 2 minutes at MEDIUM HIGH power until potatoes are cooked and sausages seem ready.

Sprinkle with green onions before serving.

Serve with crusty French bread and mustard or tomato ketchup.

Since microwave ovens vary in power, you may need to adjust your cooking time.
