PUMPKIN - APPLE STREUSEL CAKE 
1 c. shredded coconut
2 1/2 c. all-purpose flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, lightly beaten
1 c. canned pumpkin
1/2 c. vegetable oil
2 c. peeled, chopped apples

STREUSEL TOPPING:

2 tbsp. all-purpose flour
1/4 c. sugar
1/2 tsp. ground cinnamon
4 tbsp. butter

Cake: In large mixing bowl combine first 6 ingredients; set aside. In medium bowl combine eggs, pumpkin and oil. Add liquid ingredients to dry mixture, stir until just moistened, stir in apples. Spoon into a greased tube or bundt pan.

Topping: Combine flour, sugar and cinnamon in small bowl. Cut in butter until mixture is crumbly. Sprinkle topping over batter.

Bake in 350 degree oven for 35 to 40 minutes or until toothpick comes out clean.
