ITALIAN ZUCCHINI PIE 
4 c. thinly sliced zucchini
1 c. onion, chopped
1/4 c. butter
2 tbsp. parsley (optional)
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic salt
1/4 tsp. basil
1/4 tsp. oregano
2 eggs, beaten
8 oz. Mozzarella cheese, shredded

PIE CRUST:

1 c. whole wheat flour
1/4 c. oil
1/4 tsp. salt
3 tbsp. ice water
2 tsp. prepared mustard

Cook squash and onion in the butter for 10 minutes. Stir in seasonings. Combine egg and cheese. Stir squash into eggs and cheese. Pour into unbaked pie crust.

PIE CRUST: Mix flour, oil, salt, water and form into pie plate. spread mustard on crust. Pour in squash filling and bake at 375 degrees for 18-20 minutes. Use 9 inch pie plate.
