CHILI CON CARNE 
1/4 c. chopped onion
3 tbsp. fat
1/2 c. celery
1/2 c. chopped green pepper
1 lb. coarsely ground beef
1 3/4 tsp. salt
Dash of cayenne pepper
1 (No. 2) can (2 1/2 c.) tomatoes
2 2/3 c. cooked kidney beans
1 tbsp. chili powder

Cook onion in hot fat; add celery, green pepper, and meat. Cook 10 minutes until meat and vegetables are slightly cooked but not browned. Stir. Add salt and cayenne pepper, tomatoes, and beans. Cover. Heat to boiling. Cook rapidly for 15 minutes. Blend chili powder into 2 tablespoons boiling water. Stir into mixture. Add 1/2 teaspoon at a time and taste your way along.
