MEXICAN FRUITCAKE 
1 (20 oz.) can crushed pineapple, undrained
2 c. brown sugar
2 c. flour
1 tsp. baking soda
2 eggs
1 c. nut

FROSTING:

1 (8 oz.) pkg. cream cheese
2 c. powdered sugar
1 stick butter
1 tsp. vanilla

Mix together first six ingredients. Bake in a greased and floured 9"x13" pan at 350 degrees for a minimum of 30 minutes or up to 45 minutes. Just test for doneness. Remove from oven and frost immediately with prepared frosting. NOTE: Frost immediately. Do not let cake cool.
