SOFT OATMEAL COOKIES 
1 c. sugar
1/2 c. shortening
1 egg
3/4 c. buttermilk
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla
1 tsp. cinnamon
1 c. flour
2 c. oatmeal (quick cooking)
Nuts (opt.)

Mix sugar and shortening together. Add egg, buttermilk, baking soda, salt, vanilla and cinnamon; mix well. Slowly add flour and oatmeal until well blended. (Add nuts, optional.) Drop by teaspoon or tablespoonful on a greased cookie sheet. Bake at 375 degrees until lightly browned.
