GAZPACHO | |
4 c. tomato juice 1 sm. onion, minced 2 c. tomatoes, freshly diced 1 c. green pepper, minced 1 tsp. honey 1 clove garlic, crushed 1 cucumber, diced 2 scallions, chopped Juice of 1/2 lemon & 1 lime 2 tbsp. wine vinegar 1 tsp. tarragon 1 tsp. basil Dash of ground cumin 1/4 c. fresh parsley, chopped Dash of Tabasco sauce 2 tbsp. olive oil Salt & pepper to taste Combine all ingredients and chill for at least 2 hours. Serves 6. NOTE: If you want a smoother soup puree in blender. |
