8 c. zucchini
1 1/4 c. sugar
2 1/2 tbsp. flour
1 1/2 tsp. cinnamon
1 1/2 tsp. cream of tartar
3 tbsp. lemon juice

Slice zucchini like apples. Boil 5 minutes covered with hot water. Drain in colander; cool. Return to bowl with slotted spoon. Add lemon juice. Mix well. Add zucchini. (2 crust pie)
