MRS. O.'S IRISH SODA BREAD 
2 c. white flour
1 1/4 c. whole wheat flour
1/4 c. wheat bran
1/4 c. wheat germ
1 tsp. baking soda, heaped
1/2 tsp. salt
1 c. buttermilk (or enough to make a stiff dough)

Mix dry ingredients in mixing bowl. Make a well in center; add buttermilk. Mix dough with wooden spoon or with your hand. Turn out on floured board and knead until dough becomes smooth. Flatten and shape into a round loaf or cake; with knife, make a cross in the center.

Put on greased cookie sheet. Bake in 350 degree oven for 45 minutes. Note: If you wish, work 2 or 3 ounces of butter into flour before adding rest of ingredients. Yield 1 loaf.
