BREAKFAST HEALTH MUFFINS 
1/2 c. butter
1 1/2 c. brown sugar
2 eggs, well beaten
1/2 qt. buttermilk
2 c. oatmeal
1 c. bran cereal
2 1/2 - 3 c. flour
2 1/2 tsp. baking soda
1/2 tsp. salt
Optional: raisins, nuts, fruit, etc.

Cream shortening and sugar; add eggs, buttermilk and cereal. Sift flour, soda and salt, add to mixture. Fold until all ingredients are mixed; use additional milk or flour to get the right consistency. Bake in muffin tins at 400 degrees for 15 to 20 minutes.
